Easy and Delicious Vegan Lunch Idea – Chickpea “Tuna” Salad Pita Pocket

It’s a positive avalanche of events that make eating well soooo worth it. But it’s not always easy making a veggie-packed, energy-loaded lunch with a busy schedule, so we at Rising Lotus want to share some of our favorite globally-inspired vegetarian and vegan lunch ideas with you. These recipes are to taste, allowing you to be creative and flexible, so no major preparation, precise measurements, or kitchen skills are required. We hope you will feel inspired to try out some of these yummy recipes so you feel fab and empowered too! The first recipe we want to share with all of you is the Chickpea “Tuna” Salad Pocket.  It is super easy to make and absolutely delicious, perfect for all the RL girls on the go.

Tuna is one of the world’s most popular seafood stars. It is enjoyed raw or cooked, and in a variety of styles. But our oceans are dirty and over-farmed, so tuna isn’t always a healthy or frugal option. Tuna salad is popular in North America and blends canned tuna with mayonnaise. Our chickpea “tuna” salad is full of fresh and flavorful surprises! Simply mash 1 cup of cooked chickpeas until the consistency is chunky, mix with chopped crunchy veggies of your choosing, such as celery, onion and peppers, and mix with a tablespoon of chopped dill, the juice of half a lemon and a dollop of a creamy component, such as mayonnaise. To keep it completely plant-based, keep the mayo at bay and instead use hummus! If you can locate a dill and lemon-flavored hummus, you can leave out those fresh components from the recipe. Stuff this salad in a pita pocket with fresh spinach and sliced tomatoes and feel satisfied all afternoon.
